Noodle House Tokyo
An Ode to the Night.
In the amber glow of our ramen-ya, hand-rolled noodles meet broths simmered for decades. This isn't just dinner—it's a journey through the flavors, sounds, and spirit of Tokyo after dark.
What Makes Us Special
The Noodle House Difference
Housemade Noodles
We mill our own flour and knead our dough daily, achieving the perfect chewy texture that defines an authentic ramen experience.
Deep Umami Broth
Simmered for 48 hours, our broths extract every ounce of flavor from premium pork, chicken, and kelp.
Imported Japanese Ingredients
From artisanal miso to hand-picked nori, we source directly from small farms and producers in Japan.
Intimate Atmosphere
A sanctuary of dark wood, amber light, and soft jazz, designed for lingering over your bowl.
Our Story
The Heart Behind the Steam
To honor the soul of Japanese ramen by stewing heritage techniques with contemporary creativity. We invite you to discover the profound depth of umami in every spoonful.
Our founder and head chef, Kenji Tanaka, spent fifteen years immersed in Tokyo's ramen culture—from the narrow alleys of Golden Gai to the hallowed counters of Michelin-starred ramen-ya. He learned that a true bowl of ramen is more than sustenance; it's a ritual, a quiet conversation between chef and guest held over steaming broth.
In 2004, Kenji brought that reverence to New York. Every morning before dawn, our kitchen hums to life: bones are roasted, kelp is steeped, noodles are kneaded and cut by hand. We don't take shortcuts because the masters who taught Kenji never did. At Noodle House Tokyo, each bowl carries the weight of that tradition—and the warmth of a midnight meal shared under amber light.
Step through our noren curtain. The jazz is soft, the light is low, and somewhere in the kitchen, a pot has been simmering for two days. It's ready for you.
